Cajun Cake

2 Cups self rising flour
1 1/2 Cups sugar
2 Eggs well beaten
1 Large can crushed pineapple (use juice in cake)
1 Teaspoon vanilla
1 Stick butter
1 Small evaporated milk
1 Cup sugar
1 Cup of coconut
1 Cup pecans

Mix dry ingredients togther in large bowl. Set aside. In another bowl, beat eggs. Add pineapple with juice, and vanilla. Mix well. Add egg mixture to dry ingredients. Stir well and pour into a well greased and flour 9X13 inch baking pan. Bake in a preheat 300 degree oven for 50 to 60 minutes or untill a toothpick inserted in center comes out clean. Frosting: 1 Stick butter, 1 small evaporated milk and 1 cup sugar. Let come to a full boil stiring, cook 5 to 6 minutes. Remove from heat. Add 1 teaspoon of vanilla, 1 cup of coconut and 1 cup pecans. Best if you take a toothpick and put small holes all over. Warm cake, then spread frosting over it.
