Warm Weather Causes Syrup Tapping Time

WAUSAU, Wisconsin (WXOW) -  For people in the maple syrup business, it's already time to start collecting the sap from their trees. Roth Sugar Bush in Cadott, Wisconsin, began tapping its trees on Monday, but the mild weather could have an affect on business.

Pete Roth says,  "It pretty much is determined by what the weather is when the time the sap runs. If you get the freezing nights and warm days when the sap is supposed to run, it will run. But if it goes from winter to summer, it won't run. You gotta have the freezing nights and warm days."

You can start getting sap from a tree when the tree starts budding, that's usually in April or May. But if the weather is too warm, it means less sap to make maple syrup.  That could lower the supply causing a price increase.
