ARGYLE, Wisconsin (WXOW) - Wisconsin is known for the high quality of its milk and one small business is making the most of its qualities to make yet another great dairy product.
In this segment of Wisconsin Dairy News we're paying a visit to Argyle and Louie's Specialty Foods.
Louie's Specialty Foods in Argyle has been making pudding and baked custard using high quality Wisconsin milk for nearly three decades. But now someone else is at the helm.
Anne Lancaster, the owner of Louie's Specialty Foods says, "Louie's Specialty Foods came from Louie, who is my father-in-law, and he had the business for twenty-five years. And three years ago he retired and so I took over the business part of it."
Anne Lancaster is still using the Old World family recipes, but did make a few changes when she took over the company in 2009; such as installing a machine to seal the product, increasing product shelf-life, and using all-natural ingredients.
Anne: "Wisconsin has high quality of milk, and it's one of the leading states with milk and so we wanted to make sure we had high quality use and we're part of Something Special From Wisconsin™ and we wanted to incorporate that into our product."
The pudding is a milk-filled delight that's keeping people connected with their past.
Anne: "People grew up with it as children and now with the busy lifestyle they don't have time to make the pudding, so it's a comfort food, and it brings them back to what they grew up with."
Using fresh, local ingredients for their line of baked custards and rice, bread and chocolate puddings, Louie's Specialty Foods keeps their ingredient list simple.
Anne: "You're using fresh eggs, you're using fresh milk, and that…you can taste the difference in the product; tastes creamier!"
And having high quality standards also sets them apart from the competition.
Anne: "We taste test the product before it leaves here, every batch gets taste tested, so we know exactly what we are sending out. So we have high quality standards here."
