MADISON, Wisconsin (WXOW) - April is Grilled Cheese Month, and to celebrate we're highlighting creative twists on the classic sandwich. In this segment of Wisconsin Dairy News we'll show you how grilled cheese sandwiches are being stuffed with great ingredients.
There's no doubt about it, the Grilled Cheese Sandwich is still a staple offering on many restaurant menus. At Alchemy Café on Madison's east side, diners are treated to a vegetarian option that's full of flavor!
Brandon Walker, the AM Kitchen Manager at Alchemy Café says, "The stuffed grilled cheese sandwich is… it's on a sour dough, and it's got Wisconsin Swiss and it's got Wisconsin Cheddar with broccoli, carrots, tomatoes, red onions and a cilantro pesto sauce that we make in house."
All around the state-as well as the country-- restaurants are offering up grilled sandwich options with great Wisconsin cheeses and other tasty ingredients.
Kristy Schwinn, the Sous Chef at Marigold Kitchen, "They sell very well. The one is with the French Bayonne ham and Gruyere, and the other is a vegetarian option with Portobello mushrooms, oven roasted tomatoes, arugula pesto and Havarti. So it's a tasty one!"
At Marigold Kitchen in Madison, the menu may change with the seasons, but one thing is for sure, the grilled cheese sandwich will remain a constant.
And over at Alchemy Café, so will their version of the classic sandwich.
Brandon: "It's one of the items that have been on the menu since we started. And so it's lasted five years almost six, and people still love it and it hasn't changed!"
So rest assured, restaurants will continue to feature this classic version because if it were removed from the menu…
"I think there would be a riot! I think that we would lose a lot of business because of it. It's one of those things that…it's one of the items on the menu that will not be removed! People enjoy it a lot!" exclaims Brandon.

Although they offer more than sandwiches on their menu, owners at alcAlchemy Café say their stuffed grilled cheese remains one of their most popular menu items.
