La Crosse hosting 'farm to school summit'


LA CROSSE, Wisconsin (WXOW) -- Farmers and educators were among those touring the school gardens at State Road Elementary Wednesday. 

The gardens, which were created this spring, boast tomatoes, pumpkins and cucumbers among other produce. 

Wednesday was day one of the farm to school summit, being hosted in the La Crosse area, which encourages schools to use more local produce in feeding students. 

The gardens at State Road Elementary provide locally grown foods to both the school and the surrounding residents. 

Jill O'Reilly, the garden's coordinator, said the school's students help tend to the garden. O'Reilly said it's used to help educate kids about locally grown produce. 

O'Reilly said she hopes many of the summit's visitors will see State Road Elementary's garden and opt to establish a similar program in their schools and towns. 

"Students in an eight week garden program double their consumption of fruits and vegetables," she said. 

"That's huge for their health, and then because more people are realizing this, more school gardens are popping up," O'Reilly said.
