Racine, WISCONSIN (WXOW) - O & H Danish Bakery in Racine is a fourth generation business that specializes in great pastries and desserts, but its best-known offering is Kringle!
"Kringle has been made in Racine for over a hundred years. My grandfather came to this country about 90 years ago and he learned the trade of making Kringle in the bakeries in Racine," says Tom Oleson, owner of O & H Danish Bakery. "The first Kringle was actually a pretzel-shaped coffee cake and it had primarily one flavor filling which was almonds, and some granulated-sugar topping. But it was this pretzel coffee cake and the Danish bakers in Racine, they started making it in a different shape which was an oval shape."
The oval shape made it easier to slice and eat, and a wide selection of flavors was created to suit any taste. Wisconsinites can even claim their own signature flavor. "We came up with what we call a Wisconsin Kringle, and it's putting together three of our most favorite ingredients which is Wisconsin cream cheese, with cranberries fresh from the bog, and our cherries out of Door County. So we have three really great Wisconsin ingredients going into one Kringle, and it's been a hit ever since we launched it in August," says Peter Oleson, vice president of O & H Danish Bakery.
Wisconsin lawmakers recognized the excellence of our Danish bakeries by declaring Kringle the official state pastry last summer.
