Wisconsin Dairy News- Pairing Chocolate and Cheese

MADISON, Wisconsin (WXOW) - Cheese pairs well with wine, beer, and spirits with cheese, as well as nuts, fruits, and crackers; but have you ever thought of dark chocolate as a possibility?

Gail Ambrosius is a chocolatier based in Madison who specializes in pairing outstanding chocolate with the right flavor accompaniment, including cheese.  "You get a nice soft creamy cheese and it melts in your mouth the same way the chocolate melts in your mouth. You know it's that cocoa butter melting on your palate that's just so satisfying and kind of sexy and you know if you pair it with the right cheese, it's kind of magic!" says Gail.

In front of a crowd of about 50 cheese and chocolate enthusiasts, Gail and Sara Hill, Culinary Manager for Cheese Education for the Wisconsin Milk Marketing Board, led a seminar about pairing Wisconsin Cheese and chocolate.
"It's about entertaining but not having mass quantities, but having really the best cheese, and the best quality chocolate to really satisfy that dessert need that everyone has," says Sara.

Gail adds that the two ingredients pair well in a variety of ways. "It hits so many different zones in your mouth too, it can be a little salty, it can be a little sweet, it can get you in the back you know where the tannins come out. It's just so satisfying and really complex. No two chocolates are the same," says Gail.

With more than 600 varieties, types and styles of Wisconsin Cheese, and numerous chocolates to choose from, the pairing possibilities are endless.
