For many of us of Norwegian heritage, lefse is a holiday tradition at the dinner table.

Lefse is best described as a Norwegian tortilla.  It is most commonly eaten with butter and sugar.

Norsland Lefse, located in downtown Rushford, Minnesota has produced lefse for a quarter century.  They claim there's is the best around.

"Quality is important, we're not going to sacrifice it.  We can do things probably cheaper by not using real potatoes, we can use instant potatoes.  We want to be Grandma's lefse, the real deal, so it's going to be homemade lefse and we want to be known as the best," says owner, Mark Johnson.


Mark Johnson, says October through December are by far their busiest time of the year with 75 percent of annual sales done during that time.
