The Stoddard woman who recently won a Food Network baking competition joined us on Daybreak. Jen Barney made a butterscotch pudding.
She recently won the Food Network Holiday Baking Championship and she is on the cover of Coulee Parenting Connection Magazine. Barney owns and operates Meringue Bakery out of her home.

Here is the ingredients and recipe:
1 heaping cup dark brown sugar
1/2 cup water
1 1/2 tsp salt
2 cups heavy cream
1 1/2 cups milk
5 tablespoons cornstarch
5 tablespoons butter
1 tsp vanilla
optional: 1 1/2 tablespoons dark rum or whisky
In large saucepan, heat the brown sugar, water, and salt over high heat. Cook to a dark caramel or until the sugar starts to toast. This will take 5-10 minutes. The sugar will smell caramelized and nutty. Whisk in cream and milk. Bring this mixture to a boil.
Meanwhile, in a medium bowl, whisk together the egg, yolks, and cornstarch. While whisking, poor the hot milk into this mixture. Place this custard back into the sauce pan and turn the heat to a medium setting. Do not stop stirring and continue to cook until the pudding starts to thicken and boil. Pull from the heat and add the butter and vanilla last. Poor into serving containers and eat right away or allow to chill to thicken.
